It is said that the location of Ardbeg distillery was once the hideout of smugglers who dispersed after their cache was discovered by the Excise men. Peat smoke, iodine, seaweed and sawdust on the nose. Smokey, salty flavour. The older expressions gain in depth but all have the powerful aromas associated with Islay malts.

Nosed straight, the aroma is of sweet hay, fresh and meadow- like. Hay notes are also apparent in the flavour, with a slightly lemony tinge. The overall impression is well balanced, clean and dry.

A butterscotch sweetness adds to the overall complexity. Finish: Fresh and fruity with a long lasting oaky sweetness.

Balvenie 12 year Double Wood

Highland malt 40%. The Double Wood is a 12 year old single malt which gains its distinctive character from being matured in two woods. During its period of maturation it is transferred from a traditional oak whisky cask to a first fill Spanish oak sherry cask. Each stage lends different qualities to the resulting single malt - the traditional casks, having previously held bourbon, soften and add character, whilst the sherry wood brings depth and fullness of flavour.

Highland malt 47%. The Balvenie Single Barrel Single Malt Scotch Whisky is a 15 year old single malt which is drawn from a single bourbon cask of a single distillation. Each cask forms a limited edition of hand-numbered bottles - there will be a maximum of 350 bottles from any one cask - so each bottle is unique and unrepeatable. Each cask is subtly different, however, The Balvenie Malt Master selects for bottling only those casks that have the essential characteristics of The Balvenie Single Barrel - particularly honey, vanilla and oaky notes.

Bowmore 12 year

Bowmore is considered to be the 'capital' of Islay with its quirky round church, and the distillery on the quayside.
A much more complex nose than the southern Islays, and fuller than their northern cousins. The nose is peaty, but not medicinal; the flavour is big, sweet and resonant; there are traces of linseed oil and pure turpentine, reminiscent of a painter's studio; a salty tang, and billows of smoke.

Colour is gold. The nose is peaty, smoky. Body is light, but has an interesting texture. Palate is firm, and confirms the nose. Smoky and peaty taste is predominant.

The colour is between gold and amber. A smell of fresh leather, fern and sea air. A smooth palate, and a salted taste mixed with sweet cherries.

The nose has a smooth and slightly medicinal character and reveals smoky malted barley notes. The palate is round and rather balanced between malty, peaty and vegetable hints. The delicate finish is vegetal and smokey.

Pronounced 'brewichladdie', from the most westerly of Scottish distilleries. A delicate nose, biscuity, slightly oily, with a hint of seaweed; there is no trace of peat until water is added, and then it is only slight - little to betray its Islay origin. Flavour is fresh at first, with almonds, moss and sea breeze, developing into a sweet finish. A complex and subtle malt.

It is the lightest of all Islay malts. Light in colour, it has a very fresh, salty nose and a light to medium body. Its flavour is smooth and subtly phenolic - a faint whiff of smoke, with a malty sweetness. Flavour develops well, and the finish is refreshing.

Islay malt 43%
Caol Ila pronounced 'cull-eela' is Gaelic for the Sound of Islay. Very pale in colour, with a greenish tinge. Malty, biscuity, heather-smoke nose, with a hint of rhododendrons and wet spring mornings - especially once water is added - and a whiff of smoke. The flavour is well-balanced, sweet and dry, with a good body and a bitter charcoal finish.

Islay malt 43%. The colour is yellow-gold. Net nose, complex, is marked by peat, iodine (salmon eggs), spices and citrus fruits (lemon, clementine). The palate is elegant, and reveals hints of candy, sweet almond and dry peat. The finish is long, smooth and firm, and develops on smoky malted barley sweetness.

Cask strength 55%. Colour: Yellow with greenish glints. Palate: Smooth, rather oily and salted. It reveals progressively some herbal hints (fresh malt, fresh tobacco) fruity hints (prune, pear), some chocolate and smoke.
Finish:reveals malted barley and continues on fine dry fruit hints (hazelnut almond).

12 year old Speyside malt 40%
Has been described as a ladies' whisky. Lightly scented with violets and sweet almonds; notes of peachstones and honeycomb, a whiff of smoke. The flavour is fresh, sweet and smooth, with traces of cedarwood and aromatic spices. The spiciness is reminiscent of a Highland, but the sweetness is pure Speyside.

Nosed straight, Cragganmore has a polished leather aroma, with a hint of sherry; when water is added, other sweet scents emerge: pine essence, spices, cider apples, leather. The overall impression is complex, clean and fresh. The taste begins dry and finishes sweet; there is plenty of sherry, but it doesn't mask a variety of other herbal notes. There is some restrained peat smoke. It fills the mouth with flavours and has a long finish.

From the highest distillery in Scotland where cattle drovers and smugglers met on their way to markets in the south. The advertising slogan for Dalwhinnie is the 'gentle spirit', but this does not mean it lacks character. Pale gold in colour, its nose is very aromatic, with traces of heather flowers and peat smoke, and malty and fruity undertones. The taste is very sweet, slightly oily and smooth - honey and flowers, with a malty and heathery finish. 'Heather-honey' is promised on the label.

40%. From the smallest distillery in Scotland, established by a group of farmers in Perthshire. Edradour shows an extraordinary floral nose and a light but substantial body. At ten years old this is a beautifully developed whisky, with layer upon layer that unravel across one's tongue. It is sweetish to start with and spicy to finish with just a trace of sherry, but more of mint and a buttery aftertaste. Clean and fresh, this is a dram for any time of day or night.

Edradour is a unique, single Highland malt whisky, to be enjoyed in recognition of those small, significant moments that make up the ebb and flow of life. It is produced in Scotland's smallest distillery - and is hand made today as it was over 150 years ago by just three men who are devoted to the time-honoured methods of whisky making. Indeed equipment used at the distillery has remained unchanged since the day the distillery opened and is only just capable of producing commercial quantities. Only 12 casks of whisky are produced a week, making Edradour single malt a rare pleasure for a fortunate few.
