Trevélez, the town with the highest altitude in Spain has unique climatic conditions which make the special characteristics of this ham. Jamón Serrano has a lower moisture content in the end product, giving it a firmer texture and a more intense flavour.
Bellota
The Iberico pig, native and exclusive to the Iberian Peninsula, is raised freely in a system known as the Dehesa. Vast woodlands of cork and holm oak supply the staple diet of acorn (bellota) and aromatic grass that cause the resultant ham, known as" Pata Negra" to be the most revered in Spain.
